Paleo Lemon Curd

Paleo Lemon Curd If you love lemons, you will love this thick, tangy, rich curd. It is dairy free and sweetened with just the right amount of honey. Enjoy x M 

Paleo Lemon Curd
This is a tangy paleo lemon curd.
  • 2 eggs
  • 2 egg yolks (this is in addition to the 2 eggs above)
  • ⅓ cup honey
  • ½ cup lemon juice
  • 2-3 firmly packed tablespoons of lemon zest (being the zest of two lemons)
  • ¾ cup melted coconut oil
  1. Place the 2 eggs, the two egg yolks, honey and lemon juice in a bowl and whisk (or beat with an electric mixer) until light and fluffy.
  2. Place mixture into a saucepan and place on medium heat.
  3. Stir in lemon zest and coconut oil
  4. Manually whisk the mixture over the heat until mixture has thickened and is boiling then remove from heat.
  5. Place a fine sieve over a bowl and strain the curd.
  6. Refrigerate overnight (this will allow it to thicken and set).
If you have a microplane, use it to zest the lemon as in my experience, this has better results.

If you don’t have any coconut oil, you can substitute the coconut oil for the same amount of ghee (ie. ¾ cup of coconut oil = ¾ cup ghee).
