Curried Broccoli & Beef Patties

These patties are great as a snack on their own. You can serve them up for dinner with vegetables or a side salad. You can even substitute incorporate them into a burger or open sandwich.
Ingredients
  • 500g lean minced beef
  • 200g broccoli florets (see step 2)
  • 2 small scallions (or 1 small brown onion), finely chopped
  • 1 clove of garlic, finely diced
  • ½ teaspoon yellow mustard seeds
  • 1 tablespoon olive oil
  • 1 Tablesppon balsamic vinegar
  • ⅓ cup mashed sweet potato
  • 2 tablespoons curry powder (see notes)
  • ½ teaspoon ground paprika (see notes)
  • ½ teaspoon ground cumin seeds
  • ⅛ teaspoon himalayan salt
  • 1 egg
  • 1 tablespoon LSA mix (Linseed, Sunflower and Almond meal)
Instructions
  1. Preheat oven to 75 degrees celsius
  2. You will need 200g of brocolli florets (if using a head of brocoli, only leave a little of the white stem) - see photo below.
  3. Place brocoli in food processor and pulse until it resembles fluffy rice.
  4. Place olive oil in frypan and place on medium heat
  5. Once oil has heated, add garlic and yellow mustard seeds stir briefly then add onions stir until onions are translucent.
  6. Add in brocolli and stir until brocolli starts to soften
  7. Remove from heat and stir through balsamic vinegar.
  8. Add broccoli mixture, curry powder, ground paprika, ground cumin, salt, mashed potato, LSA mix and egg to the mince and mix until well combined.
  9. Using your hands, mould into patties and place on a baking tray lined with baking paper.
  10. Place in oven for 25 minutes in total (making sure to turn the patties over at the 15 minute mark, then return to the oven for the final 10 minutes - or until cooked through)
  11. Remove from oven and serve
Notes
If you live in Australia, I use Keen's Curry powder available in most grocery stores.

If you are making these patties for your kids (or don't want them to be too spicy), do not add paprika and reduce the amount of curry powder to 1½ tablespoons.
