Paleo Lemon Mousse
 
This makes a light, fluffy lemon mousse.. perfect for a light dessert and completely dairy free & gluten free.
Ingredients
  • 1 cup paleo lemon curd (thickened and chilled till set)
  • 1 cup full fat coconut cream
  • 1 tablespoon of gelatin
  • 2 tablespoons of freshly squeezed lemon juice
  • zest of one lemon (at least 2 firmly packed tablespoons of zest)
  • 2 tablespoons honey
  • pinch of himalayan salt
Instructions
  1. Place the coconut cream in a saucepan and add the gelatin
  2. Whisk together the coconut milk and gelatin
  3. Turn the stove top o medium and continue whisking until the gelatin has dissolved (or whisk for 2 minutes - whichever is longer)
  4. Pour into a container and refrigerate until set (preferably overnight, but not less than 5-6 hours)
  5. Place set chilled coconut milk into a bowl together with the lemon curd, lemon zest, lemon juice, salt and honey and blend with an electric mixer until smooth.
  6. Spoon into a bowl (or serving bowls).
Notes
This lemon mousse is not only delicious on its own, but can be used as an icing for paleo cakes and cup cakes.

Serving suggestion - top with shredded coconut and lemon zest.
