Curried Chicken & Mango Patties

I really didn’t feel like cooking tonight but I had already defrosted chicken mince.. so I used a food processor to blend together the spices and herbs – then I added it to the chicken mince and stirred until well combined. Simply divide the mixture and cook in a frypan. It’s a no fuss recipe – perfect for when you are short on time (or for those evenings when you really don’t want to spend too much time cooking).    Enjoy x M

Curried Chicken & Mango Patties
 
Quick and easy to make, these chicken patties make a great snack or can be served with a side salad or steamed vegetables for dinner.

Ingredients
  • 500g chicken mince
  • 150g mango flesh
  • 20g knob of fresh ginger
  • 1 medium fresh red chilli
  • 1 teaspoon curry powder (see notes)
  • 10g fresh coriander (leaves and stems, no roots)
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ¼ red onion (approx 30g)
  • 2 garlic cloves (approx 8g)
  • 1 tablespoon of olive oil (for cooking patties)
Instructions
  1. Cut the stalk off the chilli and cut it into three pieces.
  2. Roughly chop the ginger into smaller pieces (you can keep the skin on)
  3. Place the sliced chilli (seeds included), the mango flesh, ginger, cumin, curry powder, coriander, coriander powder, red onion and garlic into a food processor and blend until there are no large chunks of ginger or garlic.
  4. Place minced chicken into a large bowl and add mango mixture then mix with a spoon until well combined.
  5. Divide mixture into eight equal sized balls.
  6. Place oil into a large frypan and heat on medium heat.
  7. Once oil has heated, place 4 balls into the frypan and flatten them into patties with the back of the spoon (see notes).
  8. Once the patties have cooked on one side, flip them.
  9. Shortly after flipping, press down on the patties using a spatula to squeeze out some of the juices.
  10. Remove patties from frypan once cooked through and place on a paper towl and pat (or lightly squeeze) to remove excess moisture.
  11. Serve patties by themselves or with a side salad or steamed vegetables.
Notes
CURRY POWDER – If you are in Australia, you may wish to use Keens Curry powder which is available in most grocery stores.

COOKING THE PATTIES – To keep the patties neat and round, I place an egg ring into the frypan and place the chicken mixture into the middle of the ring, then using a spoon I flatten the mixture to fill the ring. Once the mixture completely fills the egg ring, I slowly lift the egg ring off.
