Chilli beef with smooth avocado salsa

This spicy mexican beef dish is a healthy alternative to Taco’s (without the Taco shells). If its winter,  you may choose to layer the mexican beef and avocado salsa with cauliflower rice. If its summer, you may choose to layer the beef and salsa with shredded lettuce. 


Chilli beef with Smooth avocado salsa
Be creative with this mexican beef dish which you present layered with avocado salsa and shredded lettuce (or cauliflower rice).

  • For the Chilli Beef you will need:-
  • 500g beef mince (preferably organic / grass fed)
  • 1 cup diced tomatoes
  • ½ teaspoon ground cayenne pepper
  • 1 teaspoon onion powder
  • 1½ teaspoons garlic powder
  • 1½ teaspoons ground paprika
  • ¼ teaspoon Himalayan salt
  • 2 cloves garlic finely chopped (ideally grated with a microplane)
  • ½ cup firmly packed fresh basil leaves, finely sliced
  • 1 teaspoon honey
  • 1 brown onion, diced
  • 1 beef stock cube dissolved in 2 tablespoons of boiling water
  • For the Avocado Salsa you will need:-
  • 1 ripe avocado
  • 2 long red chillies
  • 1 tablespoons lime juice
  • 1 teaspoon honey
  • 4 tablespoons coconut milk
  • 2 cloves of garlic finely chopped (ideally grated with a microplane)
  • cracked black pepper to taste
  • ½ red capsicum, chopped
  1. For the Chilli beef :-
  2. Place coconut oil in frypan and heat on high
  3. Once oil is heated, add chopped onion and stir until translucent
  4. Add in beef mince and stir until browned
  5. Drain any excess fluid from the mince
  6. Add in diced tomatoes, garlic, beef stock mixture, salt, honey, cayenne pepper, onion powder, garlic powder and paprika. Stir over high heat until mixture stars to boil
  7. Turn heat off and stir through fresh basil
  8. Now, for the final step pick up the ground paprika and cracked pepper and taste the chilli beef mixture adding in extra paprika and pepper to taste. Note – if the diced tomatoes were of the “no salt added” variety, you may need to add a little extra salt at this point. If the mixture is too salty or sour, you can correct by adding a little more honey.
  9. To make the avocado salsa, mix all the ingredients in a food processor until smooth.
  10. Layer the beef with the avocado salsa with shredded lettuce or cauliflower rice (using the shredded lettuce or cauliflower rice as the base layer) – Enjoy
