Paleo Coconut & Coriander Chicken

corianderchicken For a few days now, my dad has been raving about his mouthwatering coriander chicken.. one of his favourite kitchen creations which continues to wow his guests.. He shared it with me and I must admit, it is divine. Chicken breasts in a creamy coconut & coriander sauce..  

Paleo Coconut & Coriander Chicken

  • 2 Chicken breasts
  • 1 cup finely chopped coriander leaves and stems
  • 1 x 400ml can coconut cream
  • 3 heaped tablespoons desiccated coconut
  • 2 long red chillies, chopped (seeds included)
  • 1 tablespoon fish sauce
  • 1 teaspoon honey
  • 1 teaspoon coconut amino seasoning
  1. Slice the chicken breasts lengthways (horizontally) so that you get two or three thin chicken breast slices;
  2. Heat a frypan with a little coconut oil and once heated, add the chicken breast fillets and lightly brown on both sides;
  3. Add the coconut cream, stir and reduce the heat to allow mixture to simmer;
  4. In a small mug mix 1 tablespoon hot water with the honey, chilli and coconut amino seasoning** and mix well;
  5. Add the chilli mixture & desiccated coconut into the coconut cream, increase the heat and stir until coconut cream begins to boil;
  6. Once it begins to boil, remove from heat and stir through coriander.
  7. Serve immediately.
You may wish to garnish with coriander and/or shredded coconut and serve with slices of lime.
