Coconut & Apricot Nut bars

These nutty bars are packed full of protein and make a great post work out snack
  • ½ cup almonds
  • ¾ cup raw macadamia nuts, roughly chopped (or raw cashews)
  • 3 Tablespoons white sesame seeds
  • 1 cup dried apricots, diced into small pieces
  • 1½ cups shredded coconut (or coconut flakes)
  • 3 Tablespoons LSA mix (Linseed, Sunflower & Almond meal)
  • ½ teaspoon ground cinnamon
  • ½ cup raw honey
  • 2 Tablespoons melted coconut oil
  1. Place almonds in a small bowl, cover with water and leave overnight.
  2. Continue with the next step, the next day.
  3. Preheat oven to 350 degrees celcius.
  4. Line a brownie tray with baking paper (be sure to leave baking paper hanging over the sides as well to ensure it is fully lined)
  5. Drain the almonds and roughly chop them.
  6. Roughly chop the macadamia nuts (or cashews)
  7. Place chopped almonds in a large bowl together with macadamia nuts, sesame seeds, ground cinnamon, coconut and dried apricots.
  8. Place honey and coconut oil in a mug and mix until combined
  9. Pour honey mixture over the nuts and stir until well combined.
  10. Place the nut mixture into the brownie tray and press down firmly until evenly spread across the tray.
  11. Place in oven for 10 minutes.
  12. Remove from oven and allow to cool on the bench.
  13. Once cooled, place in the fridge to allow to set (leave at least 5 hours).
  14. Once set, you can slowly lift the baked nut mixture from the tray and slice with a sharp knife into bars.
  15. Place the bars into an airtight container and store in the fridge (tip - place baking paper between the layers of bars to stop them from sticking together).
